FRIED DUCK : Indonesian Cuisine

Lately, the fried duck menu seems to be a trend in the Indonesian culinary world. Savory skin and tender meat are the favorites of culinary lovers.


There are several variations of fried duck recipes depending on the type of chili sauce as a complement, such as green chili sauce, mango sauce, etc.


  • 3 cups of water
  • 1 duck, cut into 4 parts, coat with lime juice
  • 5 cm galangal, curly
  • 3 bay leaves
  • 2 orange leaves
  • Right amount of oil

Seasoning, puree :

  • 5 garlic cloves
  • 4 onion grains
  • 4 cm turmeric
  • 4 cm ginger
  • 1 tablespoon of salt

Sauce, puree :

  • 4 red peppers
  • 10 pieces of cayenne pepper
  • Terasi (according to taste)
  • 1 fresh tomato
  • 1 tsp salt
  • 1 tsp sugar

  1. Bring to a boil, add the duck, finely ground spices, galangal, bay leaves and orange leaves. Mix well and cook with a small slice until the duck is tender and the sauce thickens. Lift and drain.
  2. Heat the oil, fry the duck over medium heat until it is brownish. Lift and drain.
  3. Serve fried duck with rice and vegetables
