  • 3 Cups powdered sugar
  • ¼ cup butter or margarine melted
  • 1½ cups creamy peanut butter
  • 2 Tablespoons milk
  • 2 Tablespoons shortening
  • 2 12 oz Bags white chocolate chips
  • colored candy melts for drizzling on top (optional)

INSTRUCTIONS
  1. Beat together powdered sugar, peanut butter, and butter together. At this point the dough will be crumbly. Add two tablespoons of milk and continue to beat together until the dough softens. If the dough still seems crumbly that is ok.
  2. On a floured surface, roll the dough out to desired thickness. About ½ thickness. You can use egg cookie cutters or with a knife, shape the dough to look like eggs.
  3. Place eggs on a cookie sheet and put in the freezer for an hour.
  4. When you are ready to dip them, add the chocolate and 1 Tbsp shortening in a microwave and melt 30 seconds at a time. Stirring it after every 30 seconds and being careful not to cook the chocolate to burn.
  5. Dip each egg in chocolate. I used a spoon to help cover in the chocolate. Place them on wax paper to set.
  6. If using colored candy melts, melt each color in the microwave stirring 30 seconds at a time. Scoop the chocolate into a small zip lock bag. Snip the corner and drizzle onto each egg.
  7. If more chocolate is needed, melt the second bag with the shortening. Enjoy!

WHITE CHOCOLATE PEANUT BUTTER MOUSSE SUGAR COOKIE CUPS

  5. While the cookies are cooking, beat the heavy whipping cream and 1 tablespoon powdered sugar until soft peaks form and then set aside.
  6. In another bowl, beat together the white chocolate peanut butter, cream cheese, milk, and vanilla extract.
  7. Beat in the powdered sugar until smooth and creamy.
  8. Using a spatula, fold in the whipped cream gently.
  9. Transfer the mixture into a frosting bag that has been fitted with a star tip.
  10. Pipe the mousse into the sugar cookie cups.
  11. If desired, garnish with chocolate shavings. Make the chocolate shavings by using a vegetable peeler to "peel" the chocolate bar.
  12. Store in an airtight container in the fridge.

CHOCOLATE COCONUT WHOOPIE PIES

  • 2 eggs
  • 2 tsp. vanilla extract
  • 1 Tbsp. brown sugar
  • Coconut Cream Filling:
  • 4 oz. cream cheese, softened
  • 3-4 C. powdered sugar
  • 1 ½ tsp. coconut extract
  • ¼ C. butter, softened
  • Shredded coconut for decoration

INSTRUCTIONS
  1. Preheat oven to 350 degrees and line pans with parchment paper.
  2. Sift cake mix into a large bowl to remove any lumps.
  3. Add eggs, butter, brown sugar and vanilla extract and stir until combined well.
  4. Make dough balls the size of 1 or 1 ½ Tablespoons (depending on how large you want to finished product to be) and place on the cookies sheets 2 inches apart from each other. Gently pat down the cookies a little bit to that they don’t bake too tall.
  5. Bake for 7-12 minutes, depending on how fudgey or cakey you like your cookies.
  6. Filling: Beat cream cheese and butter for 2 minutes. Add coconut extract and slowly add powdered sugar until you reach your desired consistency.
  7. To assemble, frost the bottom of half of your cooled cookies. Then take the unfrosted cookies and pace them on top of the frosted ones creating your cookie “sandwiches.” Roll exposed edges in shredded coconut for added decoration.
