  • 2-3 tablespoons milk
  • 1½ cups powdered sugar, sifted

INSTRUCTIONS
  1. Preheat oven to 350 degrees F. Line a 9×13 pan with parchment paper and lightly spray with nonstick cooking spray. Set aside.
  2. Brownies: Add butter, sugar and cocoa powder to stand or hand mixer and beat at medium speed for 2 minutes. Add eggs to the batter one at a time, beating after each addition just until incorporated. Beat in vanilla.
  3. In a separate bowl, mix together flour, baking powder, salt and cinnamon then beat into batter just until combined. Add 1 cup semi-sweet chocolate chips and ¾ cups chopped pecans to batter and stir until just combined. Pour batter evenly into pan.
  4. Bake at 350 degrees for 30-35 minutes. Let pan cool on a wire rack for 5 minutes then poke holes all over with the back of a wooden spoon. Pour ½ cup caramel over brownies and spread into holes with a spatula. Refrigerate brownies for one hour or freeze for 30 minutes to let the caramel set. Meanwhile, prepare the Chocolate Frosting.
  5. Chocolate Frosting: Beat butter, cocoa, corn syrup and vanilla in small bowl until blended. Add powdered sugar and 2 tablespoons milk and beat until smooth, adding additional milk if needed to reach spreading consistency.
  6. Once caramel has set, frost brownies with Chocolate Frosting (you don't have to use all of it but I highly recommend it!). Sprinkle evenly with ½ cup chopped pecans, ¼ cup mini chocolate chips and drizzle with ¼ cup caramel.
  7. You can serve immediately or refrigerate to allow frosting to set and make cutting easier. I LOVE to microwave my brownie serving for 15 seconds or so before devouring.

The batter will be thick. Spread ⅔ of the batter evenly into the bottom of the 9x13 inch pan. Set aside.
  4. To make the hot fudge layer: In a mixing bowl beat together the cream cheese and hot fudge until smooth and creamy. Spread on top of the brownie layer. Spread remaining brownie batter on top. Sprinkle with peanut butter cups.
  5. Bake on the center rack for 30 minutes or until brownies are set and starting to pull away from the edges. Allow to cool completely and refrigerate for 2 hours before cutting into bars.

These brownies were perfect!  I like the peanut butter and drinkable compounding but the hot fake cheesecake place is what set them over the top!

STRAWBERRY CHEESECAKE BROWNIES

Strawberry Cheesecake Brownies. These homemade brownies are loaded up with a layer of creamy cheesecake then swirled with a sweet strawberry sauce for a pop of color and flavor!  Spoon the extra strawberry sauce over the top for an extra special dessert!

These brownies are beautiful, tasty, and kind of perfect.  I have a deep love for all things strawberry.  Especially when paired with chocolate, or cheesecake.  So these strawberry cheesecake brownies are kind of the best of all the world right here.

STRAWBERRY CHEESECAKE BROWNIES

The homemade brownie layer comes together quickly.  They are fudgy and moist.  You can always add chocolate chips to this layer too for a little extra chocolate-y kick.

The cheesecake layer is creamy and just the perfect texture.  And swirled into it there's a homemade strawberry sauce.  It's really easy to throw together, only a couple of ingredients and can be made ahead of time.  It saves in the fridge for about 2 weeks.  I used the homemade version from that recipe I'm linking to, I just strained out the chunks of strawberry and only used the juice in the swirl.  Then just spoon the extra juice back into the sauce and use it on top of the brownies.

INGREDIENTS:
Brownie Layer
  • ½ cup unsalted butter (1 stick) at room temperature
  • ½ cup light brown sugar
  • ½ cup white granulated sugar
  • 2 large eggs
  • ¼ teaspoon salt
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ cup all purpose flour
Cheesecake Layer
  • 8 ounces cream cheese (at room temperature)
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ cup white granulated sugar
  • 2 tablespoons strawberry sauce or can use a strawberry jam
INSTRUCTIONS:
  1. Preheat the oven to 350 degrees. Line an 8x8 baking dish with foil, spray with baking spray. Set aside.
  2. In large mixing bowl prepare the brownie batter. Beat the butter until creamy. Add the sugars and cream until fluffy.
  3. Add in the eggs and vanilla extract, mix until combined.
  4. Add the flour, salt, and cocoa powder. Mix until fully combined and mixture is smooth.
  5. Pour into the prepared baking dish.
  6. Bake for about 12-15 minutes until the brownies are mostly set.
  7. While the brownies are baking prepare the cheesecake mixture. In a medium size bowl beat the cream cheese until creamy.
  8. Add in the sugar, egg and vanilla extract. Mix on high speed until mixture is smooth and creamy, no lumps.
  9. Spoon the cheesecake mixture on top of the pre-cooked brownies and carefully smooth out with a rubber spatula. If you spread it too roughly you will tear up the brownies underneath.
  10. Once the cheesecake layer is smoothed out, spoon the strawberry sauce or jam on top. Using a butter knife gently swirl.
  11. Return the pan to the oven and continue baking for another 20 minutes.
  12. Allow the brownies to cool for about 20 minutes on the counter, then place the pan in the fridge and allow to cool for another 2-3 hours prior to cutting.
  13. Serve and enjoy!

If you don't have time to make the strawberry sauce you can always use a strawberry jam and swirl that into the cheesecake also.

  4. Bake in the oven at a temperature of 170 degrees Celsius for 45 minutes or until the cake is cooked. Lift. Cut into pieces, serve.
